SUMMARY:Certification of Cooking Skills for Japanese Cuisine in Foreign Countries – Bronze Medal Course
DESCRIPTION:In recent years\, Japanese cuisine has become a boom globally\, and the number of Japanese restaurants has significantly increased to approximately 120\,000 outside of Japan. However\, in some of these Japanese restaurants\, only a few chefs have learned Japanese cuisine in earnest. The Ministry of Agriculture\, Forestry and Fisheries of Japan (MAFF) established the “Guidelines for Certification of Cooking Skills for Japanese Cuisine in Foreign Countries” (April 2016) to certify foreign chefs of Japanese cuisine whose knowledge and skills regarding Japanese cuisine have reached a certain level. \nAs specified in the Guidelines\, there are three categories of certifications: Gold\, Silver\, and Bronze. Certifications are granted according to the chef’s level of knowledge and skills regarding Japanese cuisine. \n\n\nThe Gold and Silver certifications require practical experience in a Japanese restaurant located in Japan–approximately two years of experience for Gold\, and approximately one year experience for Silver\, whereas the Bronze certification can be obtained without experiencing in Japan and only need to master the basic knowledge and skills of Japanese cuisine required in many Japanese restaurants around the world. \n\n\nThe bronze Certification exam is conducted by a non-profit organization\, the Japanese Culinary Academy (authorized certification body that conforms to the MAFF Guidelines)\, whose members include top Japanese cuisine chefs\, experts\, and educators of Japanese cuisine\, and holds the most prestigious Japanese Cuisine competition called “Japanese Culinary Art Competition” at home and overseas.\nAnd this Bronze Certification exam is the only online exam that can be taken from anywhere in the world. \nObtaining a Bronze Certification will differentiate from other restaurants and attract customers\, and will be effective for the management and employment of Japanese restaurants.
