Hojicha Pudding

Hōjicha (ほうじ茶) is a type of Japanese green tea that is roasted over charcoal unlike most Japanese teas that are usually steamed.  The tea is roasted in  high temperature, which changes the leaf’s colour tints from green to reddish brown. 

The roasted flavour of Hojicha are somewhat nutty and earthy making some comparing it to coffee. Here we’ll make Hojicha Pudding using  Hojicha powder from HARADA SEICHA, cream, gelatin, milk and sugar.

 

Ingredients (serves for 4):  

Hojicha powder – 2 tbsp

Milk – 200ml

Cane sugar – 40g

Whipping cream – 100ml

Gelatin powder – 6g

Cold water – 2 tbsp

 

Preparation:

   Pour the cold water into a bowl, then add the gelatin powder and mix well. Leave for 15 mins until it hardens.

Method:

  1. Warm the milk in a saucepan to about 60 degrees, then add the Hojicha powder, gelatin and sugar and mix well.
  2. Turn off the heat and add the whipping cream into the mixture. Mix until evenly combined.
  3. Pour the mixture into a 4 small bowls and place them in the fridge to chill for 1 to 2 hours, until ready to serve.
