SINGAPORE, July 2017 – Tea Lounge at Regent Singapore, A Four Seasons Hotel will reopen on August 12, 2017, welcoming guests to experience the quintessential Afternoon Tea in a contemporary colonial garden setting. Spanning close to 185 sq. m., the refurbished 96-seat dining establishment will be a creative space for Gold culinary Olympian Pastry Chef Alex Chong and his team to showcase their delectable sweets creations.
Taking pride of place at the heart of the outlet is the Chef’s Work Table, which will be an interactive station with chefs sculpting desserts, pulling sugar and building their creations from scratch.
On weekdays, the Three-tier Afternoon Tea set presents an assortment of seasonal finger sandwiches and savoury highlights; alongside Chef’s signature butter and mixed fruit scones served with Devonshire clotted cream, house-made strawberry preserve and traditional lemon curd. However, putting a twist on the traditional three-tier experience, sweets are served à la minute as an engaging display of craftsmanship comes to life with specialty plated interactive desserts.
Individually plated dessert highlights include the Golden Apple, a delicate sucré masterpiece that cracks open to reveal a tangy iced yuzu apple compote, yoghurt espuma, hazelnut molasses crumble and olive oil sponge with vanilla fromage blanc sorbet; while Coco-Melon Symphony is a refreshing treat with bubbling coconut semi-liqueur, coconut sorbet, melon, honey dew, cantaloupe and Japanese pearls. Chocolate lovers will delight in the Dark Chocolate Forest as they indulge in caramel cream, banana chocolate gelato, pecan brownie, chocolate choux puff, banana coulis and a crunchy chocolate crumble. For slightly simpler fare, Chef’s Raspberry Soufflé with almond nougatine, raspberry compote and vanilla genoise which is served with a side of ruby peach sorbet popsicle, will satiate the sweet tooth.
With a newly introduced tableside trolley service, coffee connoisseurs can look forward to sipping on aromatic pourover coffee or perfectly decanted tea blend infusions, with complementary sweet English tea cakes, while relaxing over delectable gourmet offerings and a leisurely afternoon tête-à-tête.
The tea ceremony is one of science and service. Finely tuned recipes precisely prescribe the water temperature and steeping times to ensure the cup exceeds all expectations of what the unassuming brew has to offer. For a refreshing take on the classic, guests can opt for tea mocktails and cocktails that celebrate the lush tropical city of Singapore.
Coffee served in the Tea Lounge will be grinded on demand and with each cup made fresh. The brewing process pours water over the freshly-ground coffee to extract the flavours into the cup; delivering a round, full and mildly fruity mouthfeel finish.

Over the weekends, the Hotel’s popular High Tea Buffet continues to spoil for choice with an eclectic selection of western and eastern, with a touch of local flair. Highlights include Chilled Soba Noodles with Truffle Paste and Scallop Tartare; a decadent Caviar
Station; a local counter featuring Chef’s signature Lobster Laksa with Rice Noodles and X.O. Sauce; King Scallop Congee with Sea Cucumber and Goji Berries; and Peking Duck Egg Pancake with Regent BBQ sauce, among others.
The space transformation by multidisciplinary design practice, Hassell Studio, will reveal new plush lounge seating and modern decorative accent chairs for the ultimate comfort when lingering over afternoon tea treats. Innovative use of partitions allows for private sessions with business clients or enjoyment in the company of friends; all amidst a comfortable setting with lush foliage and natural daylight from floor-to-ceiling windows.

The Weekday Three-tier Afternoon Tea is priced starting from $48 per person and available from Monday to Friday from 12 p.m. to 5 p.m.
The Weekend High Tea Buffet is priced starting from $61 per person and available on Saturday and Sunday. 12 p.m. to 2:30 p.m. and 3 p.m. to 5:30 p.m.
